Rustic Biscotti Recipe

Homemade Biscotti Cookie Recipe
Out of all the cookies out there, Biscotti has to be one of my all time favorites. Not only do they require but a few ingredients but they're perfect for making big batches to give out as gifts. For how I like to wrap them up to give see here.

Recipe:
1 Cup white sugar
3 Cups + 2 Tab. all purpose flour
2 Tab. almond meal / powder
1 Tab. baking powder
1/2 Cup vegetable oil
3 eggs
1 tea. vanilla extract
1 Tab. almond or anise extract


Preheat your oven to 375.

Combine dry ingredients well, trying to remove as many lumps as possible.

Beat eggs in a separate bowl and add extracts. Pour into dry ingredients and blend until a dough forms.

On an ungreased cookie sheet form a long long shape with the biscotti dough about 1/2 inches thick in the center and sloping down to 1/4 inch at the edges, if possible. Brush the top of the dough with milk. Bake for 30 minutes.

After the initial baking, slice biscotti log into 1/2 inches slices to form cookies, lay each one cut side down on the cookie sheet and bake again for an additional 6 minutes.

Once cooled dip in lemon frosting, white chocolate, Nutella or sprinkle powdered sugar on top although leaving them plain is lovely too.
